Baked Tortellini with Tomato, Olives & Ricotta.

I am dying to post something hugely greasy and unhealthy, okay what I REALLY mean is that I want to EAT something hugely unhealthy like this mouth watering Southern fried chicken recipe in one of my older Masterchef Australia magazines where they went to America. However.... my Mum & I are still trying to be 'good' and are trying out all the recipes in our Weight Watchers magazine first so low and behold here is another one of my 'healthy' posts!

I do have my Mum to thank for cooking this lovely dish as I have been sick so have been sitting back being as lazy as I can be, so I guess maybe it's a blessing I haven't given in to temptation & sat there with some fried chicken goodness....

'Healthy' Creamy Fettuccine Carbonara.

Once a month a dietitian comes in to my Mums work to talk to the clients that come in. And that once a month she also brings in a new recipe to hand out to everyone. More often that not, it is also my Mum and her colleagues that love to pinch a recipe sheet and try it out at home!

On every recipe she types up there is a 'traffic light rating' with a key as to what each colour (green, orange and red) mean.
On the table Green = recipe is appropriate for everyday use. Orange = recipe is appropriate for use sometimes and Red = appropriate for use as a treat or on special occasions.

So anyway, this months recipe is 'Creamy Fettucine Carbonara' and has a traffic light rating of Green/ Orange.

Jamie Oliver Recipease Class #1: Filled Pasta.

Seeing as though it was my lovely sisters birthday on the 12th of April we wanted to do something fun and special so decided to go ahead and book our third Jamie Oliver Recipease Class in Clapham Junction together. We have already done 'Filled Pasta' and 'Mince Pie's' so this time we decided to go with the yummy Perfect Puds class.
I was looking through all my old photos today and realised I have never shared my photos of the previous two Recipease Classes we did so here is the first class we did.

Chicken, Mushroom and Leek Stroganoff.

A couple weeks ago I was really hanging out to try and make a stroganoff for the very first time. My mum made a delicious one for me quite a while ago which involved coating beef in paprika and flower then adding tomato paste as well as some various other things, but in the end I decided to try a chicken stroganoff as I had two chicken breasts sitting in the fridge waiting to be used. I was inspired by a recipe for Chicken, Mushroom & Leek Stroganoff in Jamie Oliver's Ministry of Food cookbook but changed it around a little to make it my own.

I'll put the recipe underneath the cut :)

On a bank holiday I went down to London to see my lovely sister Melissa. I met her at the train station then we headed to Canary Wharf to go to Jamie's Italian. My sister had read a couple bad reviews, but I would say it was one of my favorite restaurant experiences I have had.

The staff were very welcoming and we got a seat table straight away. They were more than helpful with explaining the menu to us and giving us recommendations. Although they didn't have a cocktail list, the waitress told me they would be happy to make anything up for me so I asked for something fruity with vodka and that's what I got, it was delicious.

We started off with the antipasto plank. Then some pasta for mains.
