Homemade Fathers Day Pita Pizza to take away!

I can sometimes struggle with finding gifts for my Dad when Fathers Day/ Birthday/ Christmas comes around. Especially this year as he has told me not to spend any money on him.
He has said this a few times but I never usually listen & then he tells me off when I buy him something, especially when he says he can 'do without' the present I bought him.

So, I had to put my thinking cap on. I was and always will spend some money on my Dad but I thought I could be different this year & give him something that he will actually use (or in this case consume!)
If there's one thing that pops in my mind when I think of my Dad (apart from being a great, awesome & loving Dad) it is PIZZA!
My Dad is really healthy and works out in his home gym every day I would say. He pretty much eats steamed fish & vegetables every single night and is in his 60's and fitter than me which really says something, BUT he does love his pizza.

I figured I would make a bunch of mini pizzas on pita bread and wrap them up so he could freeze them, take them out as he pleases and re heat them for dinner if he feels like ditching the fish & veggies for dinner one night!
I made four flavours, 'Super Dad' Supreme, Spicy Mexicana, BBQ Meat Lovers and American Pepperoni.

You can make what ever flavours you like, just see what you have in the fridge or what ever takes your fancy!






















Fathers Day Pizza Four Ways.

Makes 8 mini pizzas.

'Super Dad' Supreme Pizza

Ingredients
- 2 small round pita breads
- Pizza sauce
- Grated cheese
- Pepperoni
- Mild salami
- Red & Green Peppers (Capsicum)
- Thinly sliced onion
- Shaved smoked ham
- Small handful pork meatballs

Instructions
1. To make the pork meatballs use a large handful of freshly minced pork, add a dash of mixed herbs, garlic & paprika. Then mix it together and form marble sized (or smaller) meatballs to fry up in a pan with a little oil.

2. Put your pitas on a baking tray covered with baking paper. Next spread pizza sauce on the bases, then add all of your ingredients the way and order you like! (My Dad likes his pepperoni on top of the cheese for some reason)

3. Bake in the oven until golden and crispy.

Spicy Mexicana Pizza

Ingredients
- 2 small round pita breads- Pizza sauce
- Grated cheese
- Pepperoni
- Mild salami
- Red & Green Peppers (Capsicum)
- Small handful pork meatballs
- Sprinkle of dried chilli flakes

Instructions
1. Put your pitas on a baking tray covered with baking paper. Next spread pizza sauce on the bases, then add all of your ingredients the way and order you like! Bake in the oven until golden and crispy.

American Pepperoni Pizza.

Ingredients
- 2 small round pita breads
- Pizza sauce
- Grated cheese
- Pepperoni
- Mild salami

Instructions
1. Put your pitas on a baking tray covered with baking paper. Next spread pizza sauce on the bases, then add all of your ingredients the way and order you like! Bake in the oven until golden and crispy.

 Barbeque Meat Lovers Pizza.

 Ingredients
 - 2 small round pita breads
- Pizza sauce
- Barbeque sauce
- Grated cheese
- Thinly sliced onion
- Pepperoni
- Mild salami
- Small handful pork meatballs
- Shaved, thinly sliced smoked ham
- Cooked, diced bacon
- Cooked shredded chicken

Instructions
1. Put your pitas on a baking tray covered with baking paper. Next spread pizza sauce on the bases, then add all of your ingredients the way and order you like & swirl a nice bit of barbeque sauce on top! Bake in the oven until golden and crispy.

I wrapped the pizzas individually in foil.

















Then added these pretty dodgy gift tags I made.

















Then put them all in a container with this label on it, then popped the whole lot in the fridge or freezer.
